The Food Lover's Guide to Paris: The Best Restaurants, Bistros, Cafés, Markets, Bakeries, and More, by Patricia Wells

The book that cracks the code, from the incomparable Patricia Wells. An acclaimed authority on French cuisine, Ms. Wells has spent more than 30 years in Paris, many as former restaurant critic for The International Herald Tribune. Now her revered Food Lover’s Guide to Paris is back in a completely revised, brand-new edition.

In 457 entries—345 new to this edition, plus 112 revisited and reviewed classics—The Food Lover’s Guide to Paris offers an elegantly written go-to guide to the very best restaurants, cafés, wine bars, and bistros in Paris, as well as where to find the flakiest croissants, earthiest charcuteries, sublimest cheese, most ethereal macarons, and impeccable outdoor markets. The genius of the book is Ms. Wells’s meritocratic spirit. Whether you’re looking for a before-you-die Michelin three-star experience (Guy Savoy, perhaps, or Restaurant Alain Ducasse au Plaza Athénée) or wanting to sample the new bistronomy (Bistrot Paul Bert, Le Comptoir du Relais) or craving something simple and perfect (L’As du Fallafel, or Breizh Café for crêpes), Patricia Wells tells you exactly where to go and why you should go there. You no longer have to rely on the iffy “reviews” of Yelp or Trip Advisor.

Included are 40 recipes from some of her favorite chefs and purveyors and, of course, all the practical information: addresses, websites, email, hours, closest métro stop, specialties, and more.

Amazon.com Review
Let's face it. Finding the best of the fabled cuisine in Paris can be difficult for us Americans. We're thrown off by the language, the numerous terms for eateries, and the French themselves, who love to pretend they don't speak English.

That's why Patricia Wells's updated guide, now in its fourth edition, is a hit. With detailed information on 450 restaurants, Wells takes readers by the hand and demystifies the culture so well known for its luscious food and demanding gourmands. Sidebars abound: she dissects breads, foie gras, and oysters--and even gives the cultural background on why the French may drink wine in the morning (to kill worms, of course), as well as discussing the pros and cons of eating the rinds of cheeses. Also listed are the best bakeries, cafés, and specialty shops, as well as 50 recipes to try at home.

If there is a criticism to be made of this sturdy and informative book, it's of the writing of this International Herald Tribune critic, which is sometimes riddled with stock descriptions and clichés. Yet readers are likely to forgive her this occasional foible, as Wells's interesting details and enthusiasm are enough to send devout Italophiles, even, to Paris--where they can sink their teeth into those crusty baguettes. --Melissa Rossi

From the Back Cover
The Food Lover's Classic Brought Completely Up to Date.

An inveterate explorer of all things culinary, Patricia Wells brings us the very best of Paris: not only unforgettable evenings in her foolproof selection of restaurants, bistros, and cafes, but the places to find the flakiest croissants, earthiest charcuteries, sublimest cheeses, most knowledgeable wine merchants, gleaming pots and pans, and the holy grail of breads, pain Poilane.

Whether the urge is a simple one, like satisfying a midafternoon sweet tooth on the rule de Buci (try Jean-Pierre Carton for its puckery tarte citron or deep, rich tarte au chocolat), or grander - deciding between hallowed Taillevent or the poetic, audacious Pierre Gagnaire - Ms. Well's guidance is infallible. She tells us what is new and wonderful (more than 50 restaurants and 100 specialty food shops have been added to this edition) and what is gloriously familiar and still to be treasured. She even manages to coax recipes from her favorite chefs - 50 are included in the book.

If you take just one book to Paris, this is the one to pack
By A Customer
As I consider "Food Lovers Guide to Paris" an old friend, I was really pleased to see a timely update to one of the most useful travel books I know. I highly recommend it to anyone with a good appetite who is contemplating a visit to the City of Light.
In this fourth version of her classic, Ms Wells again does a superb job of ferreting out and reviewing top notch restaurants, cafes, bakeries, pastry shops, wine bars, candy makers, markets, and a myriad of specialty shops - anything and everything that has to do with food in the food capital of the world. Some notable names from the third edition have been dropped and some exciting new ones added.
Some restaurants have been in all four guides, but an update was certainly necessary for those who enjoy the finest of fine cuisine: three years ago, the celebrated superstar chef Joel Robuchon retired. Today, several of his talented former assistants are now running their own kitchens in Paris, and their food can be absolutely stunning. My girlfriend and I visited two of these restaurants last autumn, (during the wild mushroom season, of course!), and were blown away by the exquisite food at both establishments.
Those looking for dining bargains will not be disappointed, as a good many of the recommended restaurants are not only quite affordable, but also offer wonderful value for your money. Good food, simply but imaginatively prepared. Included amongst the latter are several wonderful regional restaurants, if, for instance, you would like to try some of the specialties of the Southwest or Provence.
As there are other serious restaurant guides available, perhaps the most uniquely useful chapters in the book are those devoted to specialty shops. Whether you are looking for fresh truffles, old cookbooks, designer china, or the most specialized and esoteric of cookware, using this book you will be able to find it.
As another reviewer pointed out that the book features a number of recipes (I think the reviewer was peeved by this), I thought I would add my two cents: every recipe I have tried from other editions of this book has been at least very good; some have been superb.
Finally, as usual, there there are many, many explanatory notes and a very good glossary that covers a large amount of French food terminology. First time visitors to Paris will find both the notes and the glossary VERY useful.

Good guide for food lovers
By A Customer
This is the only guide that I brought with me to Paris for my 2 months stay there. Here's what I like about this book:
1. The food dictionary on the back! Eventhough I can speak/write/read some French that I don't need to carry regular dictionary around, the food terms sometimes confusing and this book has an excellent section on it.
2. The recipes are worth trying. I tried her recipes for madeleine and financiers, both turned out excellent.
3. Ms. Wells not only give restaurant guides but also specialty shops, bakery, etc. Some of the recommendations are well secluded from mainstream tourists. A trully excellent find.
Here's what I don't like about this book:
1. Many of the restaurants featured are expensive, especially for 2 months stay in Paris. I think there's plenty of cheap and reasonably good food that I could find. I used Ms. Well's recommendation for weekends/special occasions.
2. I think this book is a bit too heavy/thick to carry around.

Perhaps Too Generous
By A Customer
Although I find her engaging, I have to admit my experience with Patricia Wells' guide books and recipes has been less than foolproof. Although this book contains a wealth of useful details, in my experience she is far too generous with many mediocre restaurants and I have had several meals I considered downright bad based on this book. Perhaps a part of the problem is that, unlike most restaurant reviewers, Ms. Wells is well-known and well-recognized among Parisian proprietors. She loves them, they love her. As a result, I suspect the service - and in some cases the food - are often a notch or so better for her than for the average patron.

fitting climax to a strong trilogy
By A Customer
Lord Wade is the toast of society until a riding accident blinds him. Unable to listen to the sounds of so called sympathy and "seeing" the pity in their eyes, Simon becomes a recluse, living a quiet life with his shy sister and grandmother.

In 1845, Simon's grandmother hires a companion Louisa Shelby without consulting him. Louisa and her sisters saw their world end when their father committed suicide; with her siblings settled in happy marriages, she looks forward to the single life as elderly Lady Wade's companion. To her amazement, Louise is attracted to Simon and him to her as she brings him back to life with her élan and enthusiasm helping his sister in turning more comfortable with men as well; but he assumes it is pity on her part not a passionate love like he feels so he ends their relationship abruptly. He is already hearing nasty rumors about her.

The third and final tale in the Sisters of Willow Pond miniseries (see the other Shelby siblings' tales, THE LORD NEXT DOOR and The Duke in Disguise) is an incredibly deep Victorian romance that focuses on the impact of blindness on more than just the individual as each member of his family feels the effect immensely especially since he was their leader. Readers will feel for Simon as he comes out of his self imposed shell due to Louisa although he ahs doubts about his beloved's motives. This is a fitting climax to a strong trilogy with a powerful cast that makes for a terrific historical.

A good read with a twist
By Amazon Customer
This is the first book that I read in this time in which a man has such an obvious deformity. I have not read the previous books in this series, but I don't think that it made the book any less enjoyable and I did not feel lost at all. It is a good book though the author's writing style was a bit plain and forced. The story was great and you could see the couple slowly fall in love. Though the viscount was blind, I love that he was not portrayed as weak (only in rare occasions) and that he was able to hold his own. Though he was blind, you could not help but o fall in love with him and I loved the way their romance slowly unraveled. Definitely recommend it. This was my first Gayle Callen book, and I will be in search of others.

Viscounts are people too
By viktor_57
I may be a man, and not just a man, but a revolutionary man, proud of my common origins, and I would sooner die a common death than bow my head to any duke, lord, or nobleman, but when I am not cleaning my musket, sharpening my guillotine, or practicing my close-quarter fighting formations, I am reading the Victorian romances of Gayle Callen and the struggles of the Shelby sisters, commoners who may be poor in pocket, but not poor in spirit.

"The Viscount in Her Bedroom" closes the "Sisters of Willow Pond Trilogy" with the story of Viscount Simon Wade, once London's most eligible bachelor and a man of the ladies. As a man of the people, I would have sooner run Simon through with my pike than allow him to oppress us common folk, but a terrible riding accident leaves him blind and shunned from society, reducing a once proud man to a shell of his former self.

Simon finds refuge at his grandmother's estate, and there meets Louisa Shelby, former London socialite and daughter of a wealthy merchant, but now reduced to poverty after her father's ruin and suicide. Simon's grandmother, the dowager Viscountess, ostensibly hired Louisa as her companion, but the wise old dowager might have had other motives for bringing Louisa into her home. Had the dowager brought me into her home, I would have led a revolt and spread the raging fires of liberty all across the beautiful, green countryside. Georgie, Simon's sister, also comes to stay with her grandmother the Viscountess after a disastrous coming out at the court and the balls, and rounds out the household of social castaways.

Within the circumscribed world of the Lady Wade's estate, Simon learns to overcome his physical limitations but not the societal prejudices that he feels separates him from family and friends. Louisa knew the man that Simon once was and sees what he could be, but will Simon allow himself a little humility, see past the rumors of Louisa's reputation, and learn to accept her help and even love? He better, because the love of a common woman may be the only thing that saves him from the bloody judgment of revolutionary terror.

Callen draws her characters with fine detail and loving sympathy, allowing the reader to feel the tug of every heartstring of pain and desire. I string my crossbow with whipcord and the desire to spread freedom at the pain of a sharpened bolt, but after reading Callen's moving portrayal of two characters struggling against both society and themselves, only to find refuge in each other, I am moved to sympathize with a man whose humanity overcomes the titles and privileges of his birth. I never thought I would say this, but if I ever came across Simon, the Lord Wade, sneaking into Louisa's private chambers, I would put down my pike and allow the man to live as, dare I say it, the Viscount in her bedroom.

Swords and Swordsmen, by Mike Loades

This magnificent book tells the story of the evolution of swords, how they were made, how they were used, and the people that used them. It doesn't claim to give comprehensive coverage but instead takes certain surviving examples as landmarks on a fascinating journey through the history of swords. Each is selected because it can be linked to a specific individual, thus telling their story too and giving a human interest. So the journey starts with the sword of Tutankhamun and ends with the swords of J E B Stuart and George Custer. Along the way we take in Henry V, Cromwell and Uesugi Kenshin, and there is the most detailed discussion you'll find anywhere of all of George Washington's swords. The chapters on these specific swords and swordsmen are alternated with more general chapters on the changing technical developments and fashions in swords and their use.

The reader's guide on this historical tour is Mike Loades. Mike has been handling swords most of his life, as a fight arranger, stuntman and historical weapons expert for TV and stage. He considers the sword as a functional weapon, work of art, fashion statement and cultural icon. As much as his profound knowledge of the subject, it is his lifelong passion for swords that comes through on every page. His fascinating text is supported by a lavish wealth of images, many previously unpublished and taken specifically for this book.

“…the reader is quickly drawn into a journey into man’s past that is both illuminating and entertaining. If more scholarly works were as well researched and as scintillating, the hallowed halls of academia would be that much more attractive!”

“… handsome, 494 page volume (including glossary, bibliography and index) investigates both the technical aspects as well as the societal impetus behind sword evolution in a way that is both academic as well as highly fascinating…. presents swords as seen through the eyes of prominent historical figures who used them and of particular interest is the highly detailed focus on actual pedigree pieces. Generously illustrated with period images, fine line drawings and photographs of original antique swords from museums and private collections. Swordforum.com, May 3, 2011

From its earliest pages to its epilogue (which treats the sword in its modern incarnation from a 19th century dueling implement to the modern sport of fencing), Swords And Swordsmen makes it clear that no study of the design, function and symbolism of the sword can be entirely complete without an understanding of the code of chivalry, and vice-versa.

A view from a WMA and former JSA practitioner
By William
First, a warning, this is my first review of a book. There are bound to be spelling errors, grammar issues and other such nonsense but I'm going to give it a go none-the-less.

I've been a fan of Mike Loades since finding his Weapons That Made Britain series. I've been sick and tired of seeing videos, movies, TV and other such media talking pure bunk about the weapons, armour and people of the past. Mike took time to actually do REAL research, to learn, to experiment and do as much as possible to recreate even a little piece of the past which taught me quite a few things I simply didn't know.

And that's exactly what this book did as well. I've always been focused on 1350-1430 or so in the European Martial Arts, and 1500-1650 in the Japanese Marital Arts world, so this book, opened up a whole new number of worlds for me, one where the sword was pivotal to survival, to countries, to wealth. And that says a lot right there.

The ability for Mike to really put aside all the stuff we THINK we knew about how swords were used and more importantly show us WHY they were used is simply invaluable to anyone who has even a passing interest in the history of not just the blade, but the man (or woman) behind the blade.

I spend most of my summer inside a suit of early 15th century armour, helping correct some of horrible things media has done in its view of the sword and armour, and Mike's book is yet another treasure trove of information I can use to better educate not just my students, but people with only a passing interest in the sword.

The book is well written, laid out in a chronological order, so the development of the sword, from its axe-like proto-history, to the cutlasses and sabers of the more modern era are all clear, concise and contain concrete examples of the people that used them. The illustrations and photographs are very well done, and do not distract the reader.

Well done Mike, well done.

A Swordsman's View of Swords And Swordsmen
By Scott A. Farrell
(Reviewed by Scott Farrell, contributing author of the book "Martial Arts And Philosophy" - 2010, Open Court Press Martial Arts and Philosophy: Beating and Nothingness (Popular Culture and Philosophy)

The study of the ideals of chivalry is almost insuperable from the study of arms and armor, and the men (and women) who used them throughout history. In that regard, the new book Swords And Swordsmen by noted historical interpreter Mike Loades (Pen & Sword Books, Oct. 2010, 494 pgs.) is a fascinating read for anyone who is enthralled by the lore of the sword, not just as an icon of the medieval knight, but as a symbol of the highest ideals of martial endeavor throughout history.

Fans of historically based television programming on the History, Discovery and National Geographic Channels will immediately recognize Loades from his many appearances as an expert commentator on a variety of shows. Perhaps just as recognizable as his face, however, is Loades' eager and enthusiastic voice as an advocate of active, engaging historical studies. His philosophy is based on the premise that history can't be truly understood from a distance - and Swords And Swordsmen is written in precisely this vein. The book straddles eras from Ancient Egypt during the rule of Tutankhamen (in 1336 B.C.) to the careers of J.E.B. Stuart and Gen. Custer. Almost every chapter focuses on a sword representative of a specific historical era, using the weapon to delve deeply, and sometimes very personally, into the background of a historical figure who carried and used the blade (or, at the very least, who probably carried and used one much like it).

In this way, readers learn about figures as prominent as King Henry V, Oliver Cromwell and George Washington, but also meet some lesser-known characters like King Raedwald of the East Angles, Japanese warlord Uesugi Kenshin, and Hussar Lt. Henry Lane who fought in the Battle of Waterloo. In each case (and many more) Loades figuratively lays the reader's hand on the hilt of the peculiar weapons carried by these notable (and in some cases, "notorious") individuals, and brings to life the struggles, desires, triumphs, and ideals that informed their use of the sword.

Interesting as that is, however, the thing that truly sets Swords And Swordsmen apart from other military history surveys is Loades' ability to reference his own experiences in the use of swords and the implementation of historical fighting techniques. What's it like to stand in a Viking-age shield wall, steal through the night like a ninja, or lead a cavalry charge with sabre in hand? Loades provides first-hand accounts of such incidents, drawn from his own experiences as a fight coordinator, stunt man, and historical interpreter - and his up-close, practical applications of swords in battle (simulated battle, at least) helps to shatter some long-held myths about swords and the warriors who used them.

Yet this personalized view of historical weaponry is (to use the appropriate metaphor) a double-edged sword: Although it lends a sense of liveliness to Loades' writing, it also lays out a tempting path to bypass documentable historical detail. Still, Loades generally does an admirable job of avoiding the "they must have done things like I did" assumption that, particularly in the lack of real historical evidence, can too often lead experimental historians astray.

But a sword is more than merely a lethal tool. Throughout Swords And Swordsmen, Loades' individual perspective similarly lends a unique air of authenticity in discussing not just the technical details of historical weapons and tactics, but also the principles and ideals that lie behind the image of the sword as the symbol of a champion, a protector and a "knight in shining armor." Recognizing how the chivarlric ideals have mutated throughout the ages, Loades infuses his study of the sword with observations of the sense of chivalry and honor that both inspired and were affected by (and, frankly, were just as often ridiculed or ignored by) figures such as Henry V, Emperor Maximilian, Shakespeare, Napoleon and J.E.B. Stuart (to name just a few).

From its earliest pages to its epilogue (which treats the sword in its modern incarnation from a 19th century dueling implement to the modern sport of fencing), Swords And Swordsmen makes it clear that no study of the design, function and symbolism of the sword can be entirely complete without an understanding of the code of chivalry, and vice-versa.

great book
By Scout187
My cousin who actually collects antique arms and armour recommended this book. What a great read, instead of dry historical facts this was written more like a conversation over coffee.

I'd really like to meet the author because of his actual handling of swords and other real life experiences.

I hope he'll write another book and include many more of his personal experiences with arms and armour.

I'd like to go back to college and take classes just so I can maybe make a sword or two.

Second Skins, by Jay Prosser

Examining the powerful drive that leads men and women literally to shed their skins gubarand -- in mind and body -- to cross the boundary of sex, Prosser argues that sex change is, at best, a narrative -- thus transsexuals make for adept and absorbing authors.

Review
..."Prosser brilliantly proposes conceiving the transsexual as experiencing an Imaginary phantomization of the missing sexual organs, perhaps accompanied by an agnosic [sic] relation to the birth organs. Together, these conditions combine to motivate the transsexual to seek sex reassignment surgery as a healing of what is indeed a condition of gender dysphoria....Prosser's second substantial contribution, in "Second Skins," is a critique of poststructuralist analyses of gender and transgender....Prosser's theorization of the role of narrative in transsexual self-fashioning, and his explication of a range of exemplary transsexual autobiographies are acute and illuminating.... "Second Skins" does difficult, important work in helping us to think transsexuality critically rather than judgmentally." -- Jody Norton, Eastern Michigan University, "Lesbian and Gay Studies Newsletter"

Review

"In his elegant, absorbing, and groundbreaking study of the transgendered subject, Jay Prosser draws on an array of autobiographical accounts by transsexuals to re-think, for our time, descriptive categories that enmesh sexuality with gender. Prosser's empathic and incisive argument will leave gender studies shaken up and permanently reconfigured."

(Diane Wood Middlebrook, Stanford University; author of Suits Me: The Double Life of Billy Tipton)

"It is unusual to encounter a book that is as innovative, lucid and thought-provoking as Second Skins. Prosser's book will undoubtedly become an essential work in transsexual studies, and should also be read by anyone even remotely interested in contemporary approaches to gender, sexuality, and the body."

(Rita Felski, University of Virginia)

An uncommonly perceptive critique
By La Becket
Jay Prosser's book (in addition to being uniquely insightful) occupies a unique place in the growing (trans)gender studies canon: it is the only one that engages seriously with the specificity of transsexual (as distinct from transgender) identification, and critically examines the points of critical divergence between the two (or the several, if you prefer). His readings of the Well of Loneliness and Stone Butch Blues, as well as the appended consideration of transsexual photographic self-portrait (which is as moving as it is insightful) are, quite simply, not to be missed. A must.

I am a trans person, not terribly educated in the formal sense, and I found it very accessible and innovative.

TRANSSEXUAL SELF-UNDERSTANDING

Second Skins:
The Body Narratives of Transsexuality

(New York: Columbia University Press, 1998) 270 pages
(ISBN: 0-231-10934-2; hardcover)
(ISBN: 0-231-10935-0; paperback)
(Library of Congress call number: HQ77.9.P76 1998)

Jay Prosser was born a female but as an adult lives as a man.
The books discussed here were mostly written by radical feminists.
Besides advocating the same opportunities for women as granted to men,
Prosser also advocates the freedom to change sex
—or to present oneself as an intermediate sex between female and male.
Thus, this book grew out of a personal and passionate involvement
with the cause of sex-and-gender liberation.

The background research for Second Skins was a reading of some 50
autobiographies of people who have changed from one sex to the other
—and some important works of transsexual fiction.
Jay Prosser is aware of the pressure to fabricate
a standard transsexual story
in order to convince the sex-change psychologists and surgeons.
And later these stories are elaborated into full-blown autobiographies,
but still with the purpose of justifying a sex-change.
Narratives are very important to transsexuals,
first because they must 'remember'
always wanting to be the other sex from childhood.

Prosser avoids exploring the psychological reasons
for wanting to change sex.
And any discussion of the subjects' sexual orientations,
sexual responses, & sexual relationship is mostly absent.
Such an exploration might have revealed that most of the butch lesbians
discussed in this book were trying to understand
why they have sexual fantasies of themselves as male.
Early imprinting of sex-scripts might have been a better explanation
in many cases than 'transsexuality'.
A major gap in the research behind this book is modern scientific sexology.
The author does give an account of old-fashioned explanations and some Freud.

Prosser traces the changing models
of these variations of sex and gender:
In the early 1900s, these people were called "inverts"
—meaning that they had "contrary sexual desires";
then they were "homosexuals";
finally some prefer to think of themselves as "transsexuals"
—and even later as "transgender persons".

In the early days of 'transsexuality'—beginning in the middle 1900s—
most transsexuals wanted to become completely the other sex.
When this book was written—at the end of the 1990s—
a new self-concept was emerging:
"Transgender" people want to make
what used to be a transition into an identity.
These persons do not want to fade into the general population.
They want to be known publicly as "transgender"
—somewhere between the two sexes,
perhaps with the freedom to shift back and forth at will.
For a while they called themselves "preoperative transsexuals"
or "nonoperative transsexuals".
And they greatly outnumber the people
who have undergone sex-change surgery.

Transsexual writers might not be the best people to consult
when trying to create a better model for these phenomena.
They might be too passionately involved in justifying their own choices.
But at least such autobiographies
provides lots of raw material for later scientific analysis.

All in all, Second Skins is an important contribution
to the fast-growing literature of transsexualism and transgenderism.

Worse than his lectures
By Stabien Theabrik
This book is just bad. Like calculus, statics is one of the most crucial courses for an engineering student and if you don't truly learn the material, the road ahead will be tough. This book will not help you. There are three aspects to this book: informational material (5%), example problems (45%), end of section problems (50%). It can feel like some of the sections with informational material, can fit on an index card.

The author has taken the approach of "Learning by doing" and as such, there are loads of example problems. Some sections talk about a given principle for less than half a page and then have 6+ pages of example problems. This would be an excellent thing, however the explanations on the applicaton of the principles in an example is curt and almost always a re-hash of the already very brief paragraphs in the "informational" section. This leads you to spend most of your time just trying to follow the logic (which isn't explained) in the example problem at which point your statics class becomes more of a self-taught experience.

Good book (for the self taught type of person).
By W.M. Hamilton
I used this book when I took statics a few years ago and still reference some of the concepts in my senior year of studying engineering. The book has a ridiculous amount of problems you can work out from simple to complex. The only problem with this is that the solved example problems and informational content of the book is quite small. There is a great deal of working through problems to grasp the concepts rather than you reading them and not understanding them anyways, but you can easily get stuck doing this. If you were going to buy the book I would suggest getting ahold of a solutions manual to go with it so you have something to go to if you get stuck. Other than that the examples that are provided are clearly done, without skipping steps assuming you already know, and have excellent pictures for constructing free body diagrams. If you are not required to purchase this book (i.e. you are just looking to learn something, or for reference) I would go with something else.

Excellent, Thourough Statics Text
By A Customer
The greatest feature of this book is the generous use of examples throughout. For every type of problem, there is some close example that you can refer to.
Even though I didn't particularly enjoy the class for which this text was assigned, I think that the book itself is a great resource, and should be recognized as so.
